Though originally from Mexico City, Italivi Reboreda was raised in Brooklyn, New York. She earned her Bachelors in Hospitality Management from the New York City College of Technology in 2005 and subsequently began working at Jean George's Spice Market. Asian flavors were Italivi's biggest influence up until joining the team at John Fraser's Michelin-starred Dovetail on the Upper West Side. After a year, she was promoted to Pastry Chef and began focusing on seasonal and vegetable-focused desserts. Italivi later helped open Nix in New York City, where she honed her skills with vegetarian and vegan desserts for John Fraser once again.

In the summer of 2016, Italivi spent four weeks traveling and eating her way through Mexico. During this time, she had the opportunity to cook at home with her mom, grandmother and entire family, resulting in a life-changing experience which planted her roots deeper within her Mexican culture. Through her experiences in New York City and renewed inspiration from her Mexican heritage, Italivi hopes to channel all of her passion and love for for these newly realized flavors into her desserts at Cosme.
